Banana Snack Bread

You guys! This is my first recipe I’m sharing with you all and I am so excited!

First, you are probably learning that I like to use lots of exclamation points! People at work like to comment “Are you ever not smiling?”…it’s rare when I’m not, especially when I am working on anything I like and am passionate about.

Second, this Banana Snack Bread is so good and I got so excited about it after I made it the first time! Now, this recipe actually started out as a Pumpkin Spice Snack Bread, which will be coming in a couple of days, but banana bread started to sound good in the middle of pumpkin everything. So I went out and bought the ripest bananas that I could find.

When tested it this past weekend, my fiancé and I nearly finished the entire loaf within an hour of it coming out of the oven. My fiancé loves banana-walnut bread so it was not a complete surprise, but the fact that he nearly finished something that was pretty healthy was a surprise!

Banana Snack Bread

  • 3 eggs

  • 1 teaspoon vanilla

  • 1 cup mashed banana (about 2 large bananas)

  • 1/3 cup olive oil

  • 1 cup oat flour

  • 1 cup almond flour

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • 1 teaspoon cinnamon

  • ½ teaspoon salt 

  • 1/3 cup honey

Preheat oven to 350 degrees. Line loaf pan with parchment paper and grease with a little bit of olive oil. 

In a bowl, whisk or beat together eggs and vanilla. Once combined, add in mashed banana and olive oil. 

Next add in all the remaining, dry ingredients. Whisk fully together until combined. Drizzle in the honey and fold together. 

Bake for 60 minutes or until golden brown and a toothpick comes out clean.

Let sit for 20 minutes before removing it from the pan. Once removed from the pan, cut into and enjoy! Once cooled, store in the refrigerator in a tight-lid container for up to 4 days (if it lasts that long!).
